Peach Pie





I tried to make my first peach pie ever. It was delicious and not helpful in my weight loss goals!!!
Thank you "Southern Living" magazine for this gem:

Brown Sugar -Cinnamon Peach Pie

(I made my own crust)
8 large fresh, firm, ripe peaches (about 4 pounds)
1/2 cup firmly packed light brown sugar
1/3 cup granulated sugar
1 tsp ground cinnamon
1/8 tsp salt
1 1/2 Tbsp butter, cut into pieces
1 large egg-beaten
1 1/2 Tbsp granulated sugar
Preheat oven to 425
peel peaches and cut into 1/2 inch thick slices and cut slices in half
Stir together: brown sugar, granulated sugar, Cinnamon, salt, butter and 1/4 cup flour
Add Peaches.
Stir to coat peaches.
Immediately spoon peach mixture into piecrust in pie plate.
Carefully place top layer of piecrust on top and seal edges.
Brush top with eggs and sprinkle with sugar
Freeze pie for 15 mins. Meanwhile, heat a jelly-roll pan in oven 10 mins
Place pie on hot jelly-roll pan.
Bake at 425 on lower oven rack for 15 mins
Bake at 375 for 40 mins
Cover loosely with aluminum foil (to not over brown pie) and bake 25 more mins
Transfer to wire rack and cool 2 hours before serving (if you can wait that long!)
